This is a wonderful ( and light cake ) !!! The chocolate chip topping makes it look special, but, it is a very easy cake to prepare. It is to die for served with vanilla ice cream .... :o) !!! Ingredients:
1 1/4 cups boiling water |
8 ounces dates, chopped |
1 teaspoon baking soda |
1 3/4 cups unbleached all-purpose flour |
1/3 cup sugar |
1/2 cup brown sugar, packed |
1/2 cup canola oil |
1 teaspoon baking soda |
1 teaspoon vanilla |
1/2 teaspoon salt |
1 1/2 cups semi-sweet chocolate chips |
1/4 cup brown sugar, packed |
1/4 cup unbleached all-purpose flour |
1 tablespoon butter, softened |
Directions:
1. In a large bowl, pour boiling water on dates. 2. Stir in 1 tsp baking soda. Cool about 15 minutes. 3. Make chocolate chip topping ( mix all ingredients ). Set aside. 4. Heat oven to 350ºF . 5. Stir remaining ingredients into date mixture. 6. Pour into greased 9X13-inch pan. 7. Sprinkle with topping. 8. Bake 30 to 35 minutes or until toothpick inserted in center comes out clean. 9. Cool completely before serving ( about 2 hours ). |
