This is a childhood favorite that my mom made often. It's quite easy to put together and requires no frosting! Enjoy! Ingredients:
1 cup boiling water |
1 cup dates, cut up |
1 teaspoon baking soda |
1 cup shortening |
1 cup sugar |
2 eggs, well beaten |
1 3/4 cups flour |
2 tablespoons cocoa |
1/2 teaspoon salt |
1 teaspoon vanilla |
12 ounces semi-sweet chocolate chips |
1 cup walnuts, chopped |
Directions:
1. Preheat oven to 350 degrees. 2. Place dates and baking soda in bowl. Pour boiling water over them, mix and cool down, then add vanilla. Set aside. 3. Blend flour, cocoa and salt. Set aside. 4. In a large bowl, cream shortening, sugar and eggs. 5. Alternately add the date mixture and the flour mixture to the shortening, sugar and egg mixture. 6. Pour into a greased 9X13 pan. 7. Sprinkle top with chocolate chips and walnuts. 8. Bake for 40-45 minutes. Cool to room temperature. 9. Enjoy! |
