Ingredients:
2 1/2 cups chopped dates
1 1/2 cups water plus 1 tbsp. water; divided
1/4 cup sugar
1/2 cup chopped walnuts, optional
1 1/4 cups all purpose flour
1/2 tsp. baking soda
1 1/2 cups oats
3/4 cup packed brown sugar
1/2 cup light or soft margarine
Directions:
1. Combine dates, 1 1/2 cups water and sugar in saucepan.
2. Cook over medium heat, stirring occasionally, until mixture comes to a boil.
3. Reduce heat and simmer 5 - 8 minutes or until mixture is thickened, stirring frequently.
4. Remove from heat, stir in walnuts.
5. Cool completely.
6. Preheat oven to 350 degrees.
7. Lightly grease 13X9X2 inch pan.
8. Combine flour and baking soda, mix well.
9. Stir in oats onto bottom of prepared pan. Spread with date mixture.
10. Sprinkle reserved oat mixture over top; browned.
11. Serve warm or cool.
