This is my mom's recipe. She got it from her mom, and I remember them making them when I was a little kid. Even now, when I make them, they're such a special treat. Ingredients:
crust ingredients |
1 3/4 cups oatmeal |
1 1/2 cups flour |
1/2 tsp baking powder |
1 tsp baking soda |
3/4 cup butter, melted |
1 cup brown sugar |
1/2 tsp salt |
date filling |
1 lb chopped dates |
3/4 cup sugar |
1 cup water |
1 tbs butter |
1 tsp vanilla |
1 cup chopped walnut |
Directions:
1. Make the filling: Boil dates, sugar, and water until thick, about 5-10 minutes. 2. Add 1 TBSP butter, the vanilla, and the walnuts. 3. Set aside to cool a bit. 4. Prepare the crust: Combine all dry ingredients with the melted butter. 5. Firmly press half of the mixture into a lightly greased 13 x 9 pan. 6. Cover with filling mixture and top with remaining half of crust mixture. 7. Press lightly. 8. Bake at 350 degrees for 25 minutes. 9. NO LONGER THAN THAT! 10. Cut into squares when cool. |
