From The Vegetarian No-Cholesterol Family Style Cookbook by Kate Schumann and Virginia Messina. So yummy! I used oil instead of magarine and much less than a 1/2 cup of honey instead of sugar. They were great, I had a hard time not eating the whole pan! Ingredients:
5 1/3 tablespoons margarine |
1/2 cup brown sugar |
1/2 cup soymilk |
1 cup chopped dates |
1/2 cup chopped walnuts |
1/4 cup flour |
1/4 teaspoon salt |
1/2 teaspoon baking powder |
1 teaspoon cinnamon |
1/4 teaspoon clove |
1/2 teaspoon allspice |
3/4 cup rolled oats |
Directions:
1. Cream together the margarine and brown sugar. 2. Add the milk, dates, and walnuts and combine thoroughly. 3. In a sepatate bowl, sift together the flour, salt, baking powder, cinnamon, cloves and allspice. 4. Add the rolled oats to the dry ingredients and mix together. 5. Add the dry ingredients to the date mixture, mixing to combine thouroughly. 6. Spread in an 8-inch square pan. 7. Bake at 350 for 20 minutes. |
