Not sure where I got this recipe, but love to make it around holidays. I use blood oranges if it's February. white balsamic vinegar has a more mellow flavor. Trader Joes has raw pistachios that taste even better than roasted! Read more ! Ingredients:
finely grated zest of 1 organic orange |
1/2 thinly sliced red onion |
3 tbsp white wine vinegar or white balsamic |
6 large fresh dates |
4 oranges |
1 head butter lettuce |
1/2 tsp salt |
1/4 tsp paprika |
1/4 tsp ground cumin |
1/8 tsp ground coriander |
1/4 c cilantro |
1/4 c olive oil |
1/4 c shelled green pistachios |
2 ounces feta, thinly sliced |
fresh ground pepper |
Directions:
1. toss orange zest and onion w/vinegar and chill while preparing salad. 2. If dates are hard, cover w/ hot damp towel for 5 minutes or longer until softened. Remove stones and quarte dates lengthwise. 3. section oranges, working over bowl to catch juices. 4. tear lettuce into bite sized pieces. 5. Now make vinaigrette by draining vinegar from onion into glass measuring cup and add enough of the orange juice to make 1/4 C. 6. Stir in salt, chopped cilantro, spices, and oil. 7. Taste for balance and add more vinegar if you want sharper taste. 8. Toss the lettuce with orange sections, dates, pistachioes, and dressing. 9. Mound salad onto a platter, scatter feta overtop 10. grind pepper overtop 11. serve! |
