This bread is great for brunch, snacks, or anytime you have a craving for a goodie. I rationalize it's health food with fruit and nuts. Ingredients:
3/4 cup chopped walnuts |
1 box chopped dates |
1 1/2 tsp. baking soda |
1/2 tsp. salt |
4 tbsp. butter, melted |
3/4 cup boiling water |
2 large eggs at room temperature |
1/2 tsp. vanilla extract |
1 cup sugar |
1 1/2 cup flour, sifted |
whipped cream cheese for serving |
Directions:
1. Preheat oven to 350 degrees. 2. Grease and generously dust with either dried unflavored breadcrumbs or flour a 9 x 5 inch loaf pan. 3. Combine the nuts, chopped dates, baking soda, and salt in a large mixing bowl. Add the melted butter and boiling water and after a light stir let this sit fifteen minutes. 4. Stir to blend the mixture. 5. Beat the eggs with a fork and add the vanilla extract. 6. Stir in the sugar and sifted flour to this. 7. Gently fold this into the date mixture - do not overmix. 8. Turn the batter into the prepared loaf pan and bake one hour. 9. After testing for doneness let the pan rest on a rack a few minutes before turning out the loaf to finish cooling. 10. Slice and arrange on a plate and serve with whipped cream cheese. 11. This bread freezes wonderfully. |
