I have not tried this recipe. I got this recipe from The Beverly Lewis Amish Heritage Cookbook. This says it is very nice sliced thin and served with Velveeta cheese. Ingredients:
1 cup boiling water |
1 1/2 cups pitted dates, cut fine with scissors |
1 teaspoon baking soda |
1 egg |
3/4 cup sugar |
1 teaspoon vanilla |
1/2 teaspoon salt (scant) |
2 cups sifted flour |
3/4 cup chopped nuts |
Directions:
1. Pour boiling water over dates. Add soda and let mixture cool. 2. In separate bowl, beat egg; add sugar and mix well. Stir in date mixture and remaining ingredients; mix well. 3. Bake in loaf pan, greased or lined with wax paper, for 1 hour or more at 350 degrees. 4. Ice with plain frosting if desired. |
