Darrell's Crock Pot Meatloaf |

For the man in the house. Ingredients:
1 egg |
1/4 cup milk |
2 slices bread, cubed day old |
1/4 onion, finely chopped |
2 tablespoons finely chopped green peppers |
1 teaspoon salt |
1/4 teaspoon pepper |
1 1/2 lbs lean ground beef |
1/4 cup ketchup |
8 medium carrots, peeled and cut in 1 inch chunks |
8 small red potatoes |
Directions:
1. In a bowl, beat egg and milk. 2. Stir in bread cubes, onion, green pepper, salt and pepper. 3. Add beef and mix well. 4. Shape into a round loaf. 5. Place in a 5 qt Crock Pot. 6. Spread ketchup on top of loaf. 7. Arrange carrots around loaf. 8. Peel a strip around each potato and place potatoes over carrots. 9. Cover and cook on high for one hour. Reduce to LOW. Cover and cook for 7-8 hours or until meat is no longer pink, and vegetables are tender. |
