Darn Good Pumpkin Spice Cake |

This is an adaptation of the Darn Good Chocolate Cake recipe from the book The Cake Mix Doctor. It always gets compliments when I bring it to gatherings. It is great with cream cheese icing, but equally good as is. Ingredients:
1 (18 ounce) package spice cake mix |
1 (3 1/2 ounce) package jello instant vanilla pudding mix |
1 cup pumpkin puree |
1/2 cup oil |
1/2 cup water |
3 eggs |
1 teaspoon pumpkin pie spice (optional) |
Directions:
1. HEAT oven to 350°F. 2. BEAT first 7 ingredients with mixer until well blended. Pour into 13x9-inch pan sprayed with cooking spray. 3. BAKE 32 to 35 minute or until toothpick inserted in center comes out clean. Cool completely. Frost with your favorite frosting if desired. |
