For dark chocolate lovers who don't need a super sugary taste! I found this recipe in a newspaper originally. However, the only thing I didn't alter was the baking powder & the vanilla, so it's more my own creation. In the original recipe it calls for 2 cups brown sugar splenda if you'd prefer that. I used my Whey Low, only 1 cup. And since it's 1/4 the calories & carbohydrates of regular white granulated sugar I just put in 1/4 cup reg sugar in the recipe, so feel free to adjust as needed. And of course, the walnuts are optional. Ingredients:
1 cup special dark baking cocoa |
1/4 cup sugar |
1/2 cup egg substitute (better n' eggs) |
1 cup country crock light spread |
1 cup whole wheat flour |
1 tsp baking soda |
1 tsp vanilla |
1 cup diced walnuts |
Directions:
1. mix dry ingredients together. Then mix wet ingredients together, then combine. I just throw everything into one bowl and it has the same results..LOL. You can roll it into a log shape and chill till it's hard & cut into 1/4'' thick circles, OR you can just not bother and cook directly after mixing like I did. Just making random blobs of gooey chocolate on a greased cookie sheet. I used cooking spray with the flour already in it for ease. Bake at 350F for 10-15 minutes. (go for 15 really) |
