I love chocolate chip cookies. In an attempt to replace them with something healthier and mostly organic this is what I came up with. My kids love them, and though I would prefer them in cookie form this is truly the best way to have them. Read more . *Healthier Chocolate Chip Cookies recipe will follow one day! Ingredients:
1 3/4 c. organic whole wheat flour |
3/4 tsp. baking soda |
1/4 tsp. sea salt |
1/4 c. natural dark brown molasses sugar |
2/3 c. organic applesauce |
1/4 c. organic olive oil |
1/4 c. 100% pure maple syrup or organic honey (depending on your flavor preference) |
1/2 tsp. vanilla |
2 organic eggs |
2/3 c. skim milk |
3/4 c. dark chocolate chocolate chips |
Directions:
1. Put first 10 ingredients into a large bowl. 2. Beat with mixer until well blended. 3. Stir in chocolate chips. 4. Pour into paper-lined muffins trays. 5. Bake at 350 F. 6. *13 minutes for regular sized muffins or 10 minutes for mini-muffins. |
