This is my son's Grandmother's recipe. The peppermint icing is great!
Ingredients:
1 1/2 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup cocoa
1/2 teaspoon vanilla
1/2 cup canola oil
1/2 cup sour milk
1 egg, beaten
1/2 cup boiling water
1/3 cup butter, softened
2 cups icing sugar
1 1/2-2 1/2 tablespoons milk
1/2 teaspoon peppermint extract
Directions:
1. Combine flour, sugar, baking soda, salt, cocoa, vanilla, oil, milk and egg in large bowl. Add boiling water; stir to combine. Pour into 8 square pan. Bake at 350-degrees for 35 minutes. Beat remaining ingredients. Spread over cooled cake.
