This is my own recipe. I entertain a lot and my guests always say that this cake is heavenly . If you enjoy prune cake, you will love this one. See my other recipes for my Dari's Heavenly Prune Cake Glaze. Ingredients:
3 eggs, lightly beaten |
2 cups vegetable oil |
1 cup buttermilk |
2 cups sugar |
2 cups self-rising flour |
1 teaspoon vanilla |
1 teaspoon nutmeg |
1 teaspoon ginger |
1 teaspoon cinnamon |
1 cup prune, cooked, pitted, cut into small pieces |
1 cup pecans, chopped |
Directions:
1. Preheat oven to 325 degrees. 2. Grease and flour two 8-inch round cake pans or one 13x9x2 cake pan, set aside. 3. Combine all ingredients in the order listed EXCEPT PRUNES AND PECANS. Stir until smooth by hand approximately 75 strokes. If using a mixer, blend on medium speed about 2 minutes. 4. Stir in prunes and chopped pecans. 5. Pour batter into prepared pans and bake in oven approximately 45 minutes or until a knife inserted through center come out clean. |
