A deliciously crunchy, light apple salad, with raisins and toasted almonds, the dressing is fat free yogurt, with added spices. The different textures are awesome together. Can be used for dessert or as a side dish. Read more . Enjoy! Ingredients:
6 med. size apples, tart varieties are best |
1 tbsp. lemon juice |
2 tsp. cinnamon |
1 tsp. nutmeg |
1/8 tsp cardamom (optional, but add a great spark to the flavor) |
3/4 c. slivered almonds, oven toasted |
1-1/2 c. raisins |
1 c. lite vanilla yogurt, or greek fat free yogurt with1 teas. vanilla added |
Directions:
1. Core and chop apples into 1/2 pieces, no need to peel. 2. Mix with lemon juice to stop apples from turning dark. 3. Toss with spices, add slivered almonds and raisins. 4. Mix with yogurt and serve. Best of served same day. 5. To toast almonds: Preheat oven to 350 degrees, place almond slivers in pie plate. Place in oven and bake 10-15 minutes, stirring occasionally. |
