My friend Dan's easy recipe for this southern specialty. The first of the season from the garden. My first step by step, as Dan is cooking! First of the season!! Ingredients:
1/2 cup all-purpose flour |
3 eggs, beaten |
1/2 cup yellow cornmeal |
1 lbs green tomatoes, sliced 1/2 thick |
1/2 canola oil |
kosher salt |
Directions:
1. Place the flour, eggs and cornmeal in three separate shallow bowls. 2. Dip the tomatoesfirst in the flour, then the eggs (letting any excess run off) and finally the cornmeal, pressing gently to help it adhere. 3. Heat the oil in a large skillet over medium high heat. Working in batches, cook the tomatoesuntil golden, 1 to 2 minutes per side. 4. Transfer to a paper towel-lined plate.Season with salt before serving. 5. Enjoy! |
