I made these last Christmas and they were perfect, but I'm sure they'd be nice anytime. Ingredients:
1 cup all-purpose flour |
2 tablespoons all-purpose flour |
1/8 teaspoon ground cinnamon |
1/2 cup butter, softened |
1/2 cup pecans, finely chopped |
1/2 cup powdered sugar, sifted, divided |
1/2 teaspoon vanilla extract |
powdered sugar |
Directions:
1. Combine flour and cinnamon in a large bowl. 2. Add butter, pecans, 1/4 cup powdered sugar, and vanilla, stir well until blended. Batter will be stiff. 3. Shape dough into 1 inch balls. Place on ungreased cookie sheets. 4. Bake at 400 degrees for 10-12 minutes. 5. Remove cookies to wire racks to cool slightly. 6. Roll cookies in powdered sugar, and cool completely. |
