Danish Sweet and Sour Red Cabbage |

Excellent side dish that compliments the stuffed pork tenderloin perfectly. Easy to make as well. Ingredients:
3 lbs red cabbage |
1/2 cup water |
1/4 cup butter |
2 tablespoons red wine vinegar |
1 tablespoon sugar |
salt and pepper |
1/2 cup red currant jelly |
Directions:
1. Shred cabbage. Discard tough parts. 2. Cook in butter, stirring for 3-4 minute. 3. Add water, vinegar and sugar. 4. Cover and simmer for 1 hours. 5. Add jelly and salt and pepper to taste. |
