yummy delicious tomato, basil garlic based pasta sauce from a co-worker. after we made the recipe once her way, we made our own take on it to better suit our tastes by adding oregano, adding and simmering the meat in the sauce for an extended length of time, tripling the garlic, and adding the mushrooms and green peppers. Add what works for your family's tastes and you will hopefully create a pleasant surprise like we did! Im a sauce novice, so taking a friends and making it mine is a really fun task!
Ingredients:
2 teaspoons olive oil
1 small white onion, finely chopped
9 garlic cloves, chopped
1 (28 ounce) can diced tomatoes
2 (28 ounce) cans crushed tomatoes
1 lb pork, ribs- seared
1/4 cup water (just enough to make sauce runny to your taste)
1/2 teaspoon salt
3 leaves basil (whole)
1 (6 ounce) can tomato paste
1/4 cup fresh basil chopped basil
1 tablespoon salt
1 teaspoon fresh ground black pepper
1 teaspoon red pepper flakes
1 tablespoon oregano
3/4 cup sliced mushrooms
3/4 cup finely chopped green pepper
Directions:
1. Coat pan in olive oil
2. heat pan to medium heat.
3. add chopped onion and cook for a minute or until softened.
4. add garlic, salt, pepper, red pepper flakes, oregano, and mix, let flavors blend. about 3 minutes.
5. add tomato paste.
6. add diced and crushed tomatos and transfer everything to a big pot.
7. add whole basil leaves and bring to a rolling boil, stirring.
8. add mushrooms and green peppers.
9. add seared pork ribs.
10. simmer uncovered for 2- 4 hours. the longer the better!
11. add water until sauce is runny to your liking.
12. add salt.
13. add chopped basil 1/4 cup 15 minutes before taking off stove.
14. turn heat down to simmer.
15. add more seasonings to your taste (chopped basil, salt, pepper, pepperflakes).
16. cook 5 more minutes.
