Dandelion Wine

Great Spring Break Project! Wine will be ready in Fall! Ok, everyone no excuses not to have a Dandelion free lawn! ;)
Ingredients:
2 qts dandelion flowers (pick flowers at midday when fully open)
3 lbs granulated sugar
4 oranges
1 gallon water
yeast and nutrient
Directions:
1. Remove as much of the green material from the flower heads as possible, and boil a gallon of water.
2. Pour the boiling water over the flowers, cover with cloth, and steep for two days. Do not exceed two days.
3. Add the zest from four oranges (no white pith) and boil for ten minutes.
4. Strain through a muslin cloth or bag onto a crock or plastic pail containing the sugar, stirring to dissolve.
5. When cool, add the juice of the oranges, the yeast and yeast nutrient. Pour into a carboy or some sort of airtight container, and allow to ferment completely.
6. Rack and bottle when the wine clears and repeat process until no more lees form for 60 days.
7. Allow it to age six months in the bottle before tasting, but a year’s time is ideal.
