Given to me by my CSA- what to do with dandelion greens! Ingredients:
2 tablespoons butter |
1 cup onion |
2 bunches dandelion greens (washed and chopped, without tough stems) |
1/4 teaspoon nutmeg |
1/2 teaspoon salt |
1/2 teaspoon pepper |
4 cups water |
3/4 cup light cream |
1/4 cup honey |
Directions:
1. melt butter in large stock pan 2. add onion and flour. 3. cook for 2-3 minutes. 4. add greens, stir until wilted. 5. Add water, nutmeg, salt and pepper. 6. Bring to a boil. 7. Reduce temperature, cover, and simmer for 10 minutes. 8. Carefully transfer contents of pan to blender. 9. Blend until pureed. 10. add light cream and honey, blend. 11. Pour through fine mesh sieve to remove fibers. 12. Enjoy hot or cold! |
