Damper is an Australian Bush Bread traditionally baked in a camp fire. Makes one 7 to 8 inch loaf . Since I love ginger , added sme ginger powder . Ingredients:
1 c full cream milk |
2 c self-raising flour |
1 tbsp baking pwd |
2 tsp sugar |
1 tbsp butter |
Directions:
1. Preheat oven to 400 deg F 2. Sift the dry ing. 3. Mix the sugar in . 4. Rub the butter into the mixture with your fingertips until it resembles breadcrumbs . 5. Make a well in the centre of the flour mixture . 6. Pour in the milk and mix well with a wooden spoon . 7. Turn the dough out onto a well-floured board and knead until smooth . 8. Shape into a mounded loaf about 7 inches around and about 2 inches thick . 9. Place on a greesed cookie sheet and cut across 1/2 inch deep on top of the loaf . 10. Bake for 25 mins . 11. Lower temp to 375 deg F 12. Bake 10 to 15 mins longer until the bread is golden in color and sounds hollow when tapped . |
