Dam Aloo (Dry Potato Curry)

pure Indian yummyness, serve with the kofta veggie meatball curry or with a lentil curry.
Ingredients:
1 lb potatoes, peeled,cut in even size pieces
1 medium onion
4 tablespoon sunflower oil
1 teaspoon cayenne
1/2 teaspoon turmeric
1 ounce ginger, fresh, finely chopped
1/2 teaspoon sugar
1 salt, season to taste
1/4 pint water
1 1/2 teaspoons garam massala powder powder
Directions:
1. Boil potatoes until tender. set aside.
2. blitz onion to a puree using a food processer.
3. Heat the oil and fry the onion paste until lightly brown. Stir in the cayenne, turmeric,ginger,sugar and salt. Fry for 1-2 minutes, without letting the mixture burn, then add the water. When the water begins to simmer, stir in the potatoes,cover and cook until the sauce has thickened. Sprinkle the Garam Massala and remove from the heat. Garnish if you like with coriander leaves before serving.
