My friend Dale was a big eater, as was her construction-worker husband. She made this recipe just for the 2 of them, and would double it if having another couple over for dinner (she gave me this recipe after I had it at her house, back in, I think, 1977). I have indicated two servings , but I think maybe it can be stretched a little more :-) She always served it with mashed potatoes and cole slaw. Ingredients:
3 1/2 lbs side ribs |
1 cup ketchup |
1/2 cup water |
1/4 cup white vinegar |
2 tablespoons worcestershire sauce |
2 tablespoons freshly squeezed lemon juice |
2 tablespoons brown sugar |
2 teaspoons celery seeds |
Directions:
1. Preheat oven to 300 F and place ribs in a small roaster; set aside. 2. Combine all other ingredients together in a saucepan and simmer until mixture thickens. 3. Pour sauce over ribs and bake until ribs are very tender; at least 3 hours. 4. She never told me to baste them, but I check them about once per hour and do baste them a bit with the sauce. 5. According to my friend Dale, serves 2 hearty eaters . |
