This tasty little appetizer came from Better Homes and Gardens Prizewinning Recipes quite a few years ago. I've been making these delicious snacks for years. They're easy and maybe a wee bit unusual - but a real winner. I'm craving them now...maybe I should modify my grocery list yet again. Enjoy. Ingredients:
1 1/2 cups (6 oounces) shredded cheddar cheese (or your favorite cheese) |
1 (4-ounce) can diced green chili peppers, drained |
1 (2 1/4 ounce) can sliced pitted ripe olives, drained |
1/4 cup thinly sliced green onions |
1/4 cup mayonnaise |
1 (4 1/2-ounce) can baby shrimp, rinsed and drained (or use fresh shrimp, cooked and chopped - even better) |
36-40 tortilla chips |
Directions:
1. In a large bowl, combine cheese, chili peppers, olives, green onions, and mayonnaise. 2. Gently fold in shrimp. 3. Arrange about 20 tortilla chips on a 12-inch microwave-safe platter. 4. Top each chip with a rounded teaspoon of the cheese mixture. 5. Microwave, uncovered, on 100% power (HIGH) for 1 to 2 minutes or until cheese is melted, giving the plate a half-turn after 1 minute. 6. Repeat with remaining chips and cheese mixture. 7. Makes 36-40 chips or 12 appetizer servings. 8. NOTE: These can also be baked in the oven. Preheat oven to 375 F and bake for 7 to 8 minutes or just until cheese is melted. |
