This is a high protein, low carb meal I got off off . I made a few substitutions but I like it. Ingredients:
14 1/2 oz green beans, canned |
16 oz grilled chicken breast, cubed |
1 medium onion, chopped |
2 medium tomatoes, chopped |
1 cup nonfat plain yogurt |
5 whole-wheat tortillas |
4 cloves garlic, finely chopped |
1 tbsp fresh ginger root, finely chopped |
1 salt, to taste |
1/4 cup water |
Directions:
1. Stir fry the onions, garlic, and ginger in a nonstick skillet with Pam over medium heat for about 5 minutes (until the onions start to brown). 2. Add chopped tomatoes, can of green beans, and 1/4 cup of water and bring to a boil. (Note: Chicken stock may be used as a substitute for the water). 3. Add the chicken. 4. Stir in the yogurt 1 tablespoon at a time. 5. Continue to heat until almost all of the liquid has boiled off. 6. Put the mixture on a tortilla and serve. |
