Ingredients:
6 barley rusks |
2 cup(s) anthotiro cheese, crumbled |
2 tomatoes |
1/2 cup(s) extra-virgin olive oil, plus more for drizzling |
1/2 cup(s) red wine vinegar |
a pinch of salt |
Directions:
1. Rinse the tomatoes, pat them dry with a paper towel and cut each one into 3 round slices. In a bowl, mix the olive oil, vinegar and salt to taste and combine. Place the rusks onto a small baking pan, pour oil-vinegar mixture over them and leave them to absorb. To assemble the dakosalata , spread over each rusk 1-2 tablespoons of the anthotiro. Then place a tomato slice on top and drizzle with some olive oil to serve. |
