A great recipe I modified for my food allergic daughter. Based on the recipe from SPECIAL FOODS FOR SPECIAL KIDS Ingredients:
1/2 cup dairy-free margarine |
1 cup sugar |
1 1/2 teaspoons vanilla |
1 teaspoon baking powder |
2 teaspoons baking soda, mixed with |
2 tablespoons vinegar, plus |
2 tablespoons water |
1 3/4 cups rice flour |
3/4 cup soy flour |
1/4 cup sugar |
1/2 tablespoon cinnamon |
Directions:
1. preheat oven to 350 degrees. 2. cream margarine and sugar. 3. add egg substitute and vanilla. 4. in another bowl mix the flours and baking powder. 5. add everything together to make dough. 6. drop by 1/2 tbsp measure into cinnamon sugar. 7. roll to coat. 8. place on greased cookie sheet. 9. bake 10-12 minutes. |
