Dairy And Sugar Free Organic Fruitcake |

A simple to make date and apricot fruitcake that has no dairy, no sugar and, if you do it my way, uses all organic ingredients. Ingredients:
1 cup organic pitted dates (not dried) |
.5 cup organic dried apricots |
1.5 cup organic self raising flour |
0.4 l organic fresh orange juice (with bits) |
angostura bitters (optional) |
sunflower oil |
Directions:
1. Chop the dates and apricots into small pieces 2. Place them in a bowl with the orange juice and place in the fridge (the longer you leave it the better, but no less than 4 hours, preferably overnight) - add a splash of Angostura bitters if you like, this adds a lovely flavour 3. Grease a regular baking tin with a splash of sunfower oil 4. Preheat the oven to 100C (210F) 5. Mix the flour well into the fruit mixture 6. Spoon the mixture in to the baking tin 7. Bake for 90 minutes or until a toothpick stuck in the centre comes out clean 8. Serve immediately or cold or toasted, as you like 9. Enjoy and feel free to try it with other fruits and even with apple juice. |
