Daiquiri Ice with Kiwifruit |

Ingredients:
2 1/4 cups water |
3/4 cup sugar |
1/2 cup light rum |
1/2 cup fresh lime juice |
1 tablespoon grated lime rind |
3 kiwifruit, peeled and thinly sliced |
mint sprigs (optional) |
lime slices (optional) |
Directions:
1. Combine water and sugar in a saucepan; stir well, and place over low heat. Cook 2 minutes or until sugar dissolves. Remove from heat; stir in rum, lime juice, and rind. 2. Pour mixture into the freezer can of a 1/2-gallon hand-turned or electric ice-cream freezer. Freeze according to manufacturer's instructions. Arrange kiwifruit slices and scoops of daiquiri ice on dessert plates; garnish with mint sprigs and lime slices, if desired. |
