A beautiful delicate cake that tastes like a breath of orange and is light as a feather Ingredients:
pre heat oven to 325 |
white batter |
1/2 cp flour |
1 1/4 cp egg whites |
1 tsp cream of tartar |
1/2 tsp salt |
1 cp + 2 tbs sugar |
1 tsp vanilla |
yellow batter |
2/3 cp flour |
6 egg yolks |
1 tsp orange extract |
1/2 white batter mix |
frosting |
4 cps powdered sugar |
1 stick butter |
3 to 4 tbs orange juice concentrate undiluted |
pinch salt |
2 cps flake coconut |
Directions:
1. Beat egg whites til foamy 2. add cream of tartar and salt continue to beat till peaks bekin to form 3. add sugar and vanilla beat till stiff peaks form 4. fold in flour 5. place half of mixture in large bowl 6. beat egg yolks, orange extract til light and thick 7. add flour and beat till smooth 8. fold merange mixture into yolk mixture 9. using a table spoon drop spoon fulls of white mixture and yellow mixture alternately into a tube pan until all is used up. 10. rap pan sharply on counter twice to prevent tunnels in cake 11. Run a knife around in side of cake about one inch. Near center run knife in opposite direction to create a marbled effect. 12. Bake at 325 for 60 minutes or until cake springs back when touched 13. If your pan has legs tip pan upside down to cool. If you don't have legs on your pan place it on the neck of a large bottle upside down to cool 14. When cake is completely cool run a knife or spatula around edges and center of pan. Turn out on a plate. 15. Beat powdered sugar, butter, salt and orange juice untill light and fluffy. 16. Frost top and sides of cake. Pat coconut over all. You have a very beautiful, delicious cake. |
