Another recipe from Mom's Kansas Women's Group Cookbook, circa 1935. I've made this a ton of times, it's delicious! Ingredients:
if you have no cake flour the best substitute for 1 cup cake flour is 7/8 cup all-purpose flour + 2 tablespoons cornstarch. |

6 egg whites 1/2 c cake flour |
1/2 tsp salt 1/2 tsp vanilla |
1/2 tsp cream of tarter 1/2 tsp almond |
3/4 c sugar |
yellow part |
6 egg yolks 1 c cake flour |
3/4 c sugar 1/2 tsp orange extract |
1/4 c hot water 1/2 tsp lemon |
1 tsp baking powder 1/2 tsp orange zest |
Directions:
1. Beat yolks until very thick, add sugar and eggs and beat very well 2. Add hot water, then dry ingredients and lastly flavorings and zest 3. Put in 2 round baking pans, marble cake style 4. Bake at 350 for 35 – 45 minutes or until toothpick inserted in center comes out clean 5. Cool completely 6. Frost with your flavor choice |
