My mother gave me this recipe over 25 years ago. I thought I had better post it before I lose the worn out piece of paper it's written on. Ingredients:
1/2 cup butter |
1/2 cup lard |
2 cups brown sugar |
1 teaspoon vanilla |
2 beaten eggs |
2 cups sifted flour |
1 teaspoon baking powder |
1 teaspoon baking soda |
3/4 teaspoon salt |
2 cups rolled oats |
1 1/2 cups coconut |
Directions:
1. In one bowl cream butter, lard, and sugar. 2. Add beaten eggs and vanilla. 3. In another bowl add sifted flour and other dry ingredients. 4. Gradually add the dry ingredients to the creamed mixture. 5. Roll into small ball, and flatten with a fork on a ungreased baking sheet. 6. Bake at 375 F for 10- 15 minute. |
