This was my Dad's favorite lemon bar. I tried several kinds over the years but he would always tell me to just make the old ones, they are the best . In his memory I wanted to share them with you. Ingredients:
crust |
2 c flour |
1 c butter |
1/2 c powdered sugar |
filling |
4 eggs |
5 to 6 t. lemon juice |
4t. flour |
1t. baking powder |
2 c sugar |
dash of salt |
Directions:
1. Crust 2. Mix like pie curst and press into large jelly roll pan. 3. Bake 20 minutes at 350. 4. Filling 5. Beat eggs and lemon juice until light. 6. Mix in flour, baking powder, sugar and salt. until frothy. 7. Pour over baked crust. 8. Bake 20 - 25 minutes more at 350. 9. Sprinkle powdered sugar on top for frosting. 10. Cool before cutting. 11. Enjoy, lemon always makes me smile :) |
