My Dad's recipe, he just combined two good recipes to make this great one. Ingredients:
4 lbs chicken |
1 1/2 cups vegetable shortening |
1 cup flour |
54 ounces green chili peppers |
8 ounces diced jalapeno peppers |
2 medium yellow onions |
27 ounces white hominy |
81 ounces of diced tomatoes |
2 tbs ground oregano |
2 tbs garlic powder |
1 tbs ground cumin |
Directions:
1. Saute meat in shortening, adding a portion of the spices, until brown. 2. Add flour and stir until the flour is brown. 3. Mix the other ingredients, including remaining spices, in a large pot. 4. Add the meat mixture and bring to a boil and then simmer, stirring occasionally, for at least one hour. 5. Add additional jalapeno peppers to increase flavor if desired. |
