Dad's Buckwheat and Oatflour Pancakes |

This originally came off of the back of a buckwheat flour package many years ago, but we've tweaked it a little. It makes flavorful, flat pancakes like crepes. Optionally, these can be topped with a couple tablespoons of chunky cinnamon applesauce or sour cream. Enjoy. Ingredients:
1 cup oatmeal (quick-cooking or instant) |
1/2-1 cup buckwheat flour |
1 tablespoon honey |
1 tablespoon molasses |
2 teaspoons baking powder |
1/4 teaspoon salt |
1 egg, beaten |
1 cup milk or 1 cup buttermilk |
2 tablespoons cooking oil |
Directions:
1. Grind oatmeal into a flour in food processor. 2. Mix ingredients in mixing bowl. Blend well. 3. Pour onto griddle and cook well on both sides. 4. Eat. 5. Enjoy. |
