Daddys Gotta Make These Collard Greens

The absolute secret to cooking collard greens is the seasoning. Smoked turkey necks give a great flavor and they are healthier than the fatback. Cutting out the stems will eliminate bitterness.
Ingredients:
2 healthy bunches collard greens(washed, cut, trimmed and stems removed)
*collard greens tend to be sandy or gritty if not washed properly. you might think they are clean - wash them again
i've even heard of some people putting the bunches of leaves on the top shelf of their dishwasher....without soap of course
smoked turkey necks(for 1 bunch of greens, 6 turkey necks)
olive oil
water for cooking
large pot or boiler with lid for cooking
salt
large bowl
duct tape( ) you'll find out later.....tee hee
Directions:
1. Have a large boiler on the stove with the turkey necks and olive oil boiling to get the water all seasoned up
2. DON'T PUT A LOT OF WATER! Not even half full.
3. YOU CAN ALWAYS ADD MORE WATER LATER.
4. THE GREENS PRODUCE WATER AND WILL REDUCE .
5. Wash the greens VERY good....
6. The secret again is to pull the center vein out of the collard greens and stack up the leaves. Cut all stems to avoid bitterness

8. Use the duct tape to cover your thumb to avoid cutting it off!!

10. Roll the leaves up and with a sharp knife, chop the greens well and place in another large bowl
11. Continue this process until the greens are all cut up,
12. It takes a while, but it will be so good later!
13. Once you've finished chopping, cutting, and pulling...WASH the greens again to get another good rinse.
14. Have a pot of boiling water on the stove with the smoked turkey necks and olive oil
15. You can taste a little bit of the water to make sure it is not too salty.
16. If you need to take some of the water out of the pan, save it in case you need to ADD water later
17. Once the water is seasoned, carefully add all the greens to the seasoned water,
18. You might think you've got a lot of greens, but after they cook - they have shrinkage!
19. Cover the pan and let the greens cook on medium heat until they are tender.
20. You can always add the seasoned water from earlier if necessary
21. Taste and enjoy!!
