This was my Daddy's favorite dish. He cooked at least once a week.He would have a big pan of cornbread, a side of onion a glass of buttermilk and he would have his meal. Ingredients:
6 bacon slices, fried until crisp |
1 c. celery, finely chopped |
1 c. onion, finely chopped |
4 c black eyed peas |
2 large tomatoes,peeled and cut into chunks |
Directions:
1. Drain bacon on paper towels. 2. In grease from bacon, fry celery, and onions until soft. 3. Add peas, tomatoes and chopped bacon. 4. Season with salt and pepper. 5. Simmer about 20 minutes. |
