Czech Potato Dumplings

strrdy potato dumplings, not fluffy
Ingredients:
6 large potatoes, peeled
1 egg yolk
1 1/2 tsp. salt
1/2 cup all purpose flour
1 clove garlic,finly minced(optional)
Directions:
1. boil potatoes in a small amount of water until done,drain well
2. put potatoes in hand held masher/ricer,rice and add garlic,if using, and mix well.
3. let potatoes cool, on a floured board,gragualy add flour working mixture into a dough, with your hands.
4. shape potato mixture into a long roll and cut into 10 slices
5. dump dumplings into boiling water and gently boil for 5 minutes
6. can be served as is or, as the Czech. do most of the time,heat 1 Tbs. butter in a heavy bottomed skillet and brown the dumplings then serve
