Ingredients:
ice
1 1/2 ounces gin
1 -ounce saffron simple syrup, recipe follows
1 -ounce fresh lemon juice
splash club soda
lemon peel, for garnish
2 cups water
1 cup sugar
1/2 teaspoon saffron
Directions:
1. Fill a cocktail shaker with some ice. Add gin, simple syrup and fresh lemon juice. Shake. Strain into an ice-filled Collins glass and top with a splash of club soda. Garnish with a lemon peel.

3. In a sauce pan over high heat, combine all the ingredients. Bring to a boil, and when sugar is fully dissolved remove from the heat. Let cool for 20 minutes, then strain.
