Roasted potatoes with a South Asian twist
Ingredients:
potatoes
indian green chiles or small thai peppers or any kind of pepper you want
sea salt - 1-2 tsp
coarse ground black pepper - 2 tsp
garlic cloves - as much as you like
onion - about 1/4 the volume of potatoes
curry leaves - 1 - 2 handfuls
ghee - enough to coat all ingredients
Directions:
1. Cut Potatoes and Onions into bite size chunks
2. Add Garlic and curry leaves
3. Add salt and pepper
4. Add Ghee and toss all
5. Roast for 30 minutes375
6. Stir
7. Roast until potatoes are fork tender throughout
