This dish is a great side to a summer bbq with a crowd. It has a bright color to it and very tasty! This is one of my favorites - we've been eating it with 'hots and hams' out the bungalow for years thanks to my Auntie! Read more ! Ingredients:
1 cup raw rice or 2 cups of cooked rice |
1 small package of frozen peas |
1 1/2 cups chopped celery |
1/2 cup green onion |
1/2 cup blanched almonds |
dressing |
2 tbsp vinegar |
1/2 cup veg oil |
2 tbsp soy sauce |
2 tbsp curry powder |
1/2 tsp salt |
1/2 tsp white sugar |
1/2 tsp celery seeds |
Directions:
1. Cook rice and chop up celery, green onion. 2. To blanche almonds, put in a frying pan on med-high heat and cook for a few minutes. 3. Put all ingredients together and mix (put frozen peas in last). 4. Put ingredients to dressing in a sealed container and shake to mix. 5. Add to salad and stir. 6. Enjoy! |
