Great by itself or served as a condiment for lettuce wraps or with swordfish / mahi mahi steaks etc. Ingredients:
2 tomatoes, chopped |
2 peaches, chopped |
1 avocado, chopped into bits |
1/4 teaspoon curry powder |
2 tablespoons olive oil |
1 tablespoon lemon juice |
1/4 teaspoon salt |
1 tablespoon parsley flakes |
Directions:
1. Toss all ingredients together in a bowl. 2. Serve immediately or chill up to 2 hours. |
