This is best served over rice with condiments, such as coconut, chopped peanuts, raisins, and chutney offered. Ingredients:
1/3 cup butter |
1/2 cup chopped onion |
1/4-1/2 cup chopped green pepper |
2 garlic cloves, minced |
2 cups sour cream |
2 teaspoons lemon juice |
2 teaspoons curry powder |
1/4 teaspoon salt |
1/2 teaspoon ginger |
1 dash chili powder |
1 dash pepper |
2 lbs shrimp, cleaned and cooked, split lengthwise in half |
Directions:
1. Melt butter; add onion, green pepper, and garlic. Cook until tender but not brown. Stir in sour cream, lemon juice, and seasonings; add shrimp. Cook over low heat, stirring constantly, just until heated through. (Sauce is traditionally thin.). |
