Fantastic creamy curry mayo, great for egg salads or using as a dip for vegetables. Just delicious. Ingredients:
1/2 cup mayonnaise |
1/3-1/2 cup sour cream |
1 pinch turmeric |
2 -5 drops hot sauce (tabasco) |
2 -3 teaspoons curry powder, mild |
1 tablespoon honey, liquid or melted |
1/4 cup citrus juice |
good shake salt & pepper |
Directions:
1. Mix all ingredients by hand until smooth or process in a food processor or blender until smooth, stopping to scrape down sides. 2. Personally I mix this by hand and use 2 rounded (not heaped) teaspoons of curry powder & 5 drops of Tabasco sauce. For juice I used a big 1/2 a very juicy lemon (but would use whatever I had on hand) & melted the honey in the microwave before drizzling into dressing whilst stirring. Cooked 6 eggs, chopped roughly and mixed dressing through. Also great with carrots & other veges as a dip. |
