Curry Lentils With Chicken |

This is an anitajoye original and it is delish! It's great crockpot dish. Start it in the morning and it will be ready for dinner. You can serve it over Basmatti rice, or eat alone as a soup Ingredients:
2 cups lentils |
3 cups water |
2 chicken breasts, cubed |
2 chicken bouillon cubes |
1 onion, minced |
3 garlic cloves, minced |
1 (15 ounce) can diced tomatoes with juice or 1 (15 ounce) can fresh tomatoes, equivalent |
2 teaspoons curry powder |
1/2 teaspoon cumin |
1/2 teaspoon cinnamon |
1/8 teaspoon nutmeg |
1/2 teaspoon ground coriander |
1/2 teaspoon ginger |
2 tablespoons white vinegar |
1/2 cup cilantro, chopped |
salt and pepper |
Directions:
1. Put all ingredients but the cilantro in the crock pot. If you want your chicken in a 'shredded' like consistency, put it in now, if you want it less done, add about 1.5 hours before you want to eat it in chunks. 2. Leave to cook overnight or start in the morning for dinner. 3. Taste to season with salt and pepper and add fresh cilantro. 4. stir and enjoy. 5. Can be eaten alone or with rice. 6. Can be cooked on the stove top as well, but the crockpot is easiest. 7. Soooo yummy. |
