Found this in Simple & Delicious- another way to use the spinach my daughter loves. Ingredients:
1 lb boneless skinless chicken breast, cubed |
2 teaspoons curry powder |
3/4 teaspoon salt |
1/4 teaspoon pepper |
1 tablespoon vegetable oil |
1/2 cup onion, chopped |
1 (13 1/2 ounce) can coconut milk |
2 tablespoons tomato paste |
3 cups fresh spinach |
1 cup tomato, chopped |
Directions:
1. Mix together curry, salt & pepper- Sprinkle over chicken. 2. In a large skillet, saute the onion and chicken until no longer pink, about 8 minutes. 3. Stir in coconut milk and tomato paste. Bring to a boil. 4. Reduce heat and simmer uncovered for 5 minutes. 5. Add spinach and tomato. Cook for 2-3 more minutes. 6. Serve over rice. |
