I got this recipe from my SIL and I absolutely love it, so I felt I had to pass it on! Very easy to make, just remember to make it ahead of time to allow for the chicken to marinate. ** the prep time includes the time to marinate** This chicken salad makes a great wrap or sandwich and is also terrific served with crackers. Enjoy! Ingredients:
4 cups boiled and cubed chicken |
3/4 cup italian dressing |
2 cups thinly sliced celery |
1 cup pineapple tidbits |
1 cup halved red seedless grapes |
2 teaspoons curry powder |
1 cup mayonnaise |
2 tablespoons dijon mustard |
Directions:
1. Boil and cube chicken breasts. 2. Put cooked, cubed chicken in a large bowl and toss with italian dressing. 3. Cover and refrigerate at least 4 hours, but no more than one day. 4. Mix in celery, pineapple, and grapes. 5. In separate bowl, combine mayonnaise, mustard, and curry. Blend well. 6. Add to chicken mixture and stir to blend well. 7. Serve immediately or you can cover and refrigerate until you're ready. |
