The best chicken salad in the world. My favorite way to eat this is on a croissant, but it is great by itself or on any other type of bread too. Also I always go by taste on the curry powder, but the measurement is close. Ingredients:
2 chicken breasts |
4 tablespoons mayonnaise |
2 tablespoons plain nonfat yogurt |
1 teaspoon curry powder |
1/4 teaspoon salt |
1 (15 ounce) can pineapple chunks |
1/2 cup sliced almonds |
Directions:
1. Poach chicken breasts in water (or chicken stock) for 15-17 minutes or until done. Cut into one inch cubes and chill. 2. Blend ingredients to taste. You can make more of the sauce mixture if you desire. 3. Enjoy. |
