A spicy chicken & veggie dish. Great over rice. Ingredients:
1/2 c. green bell pepper |
1/2 c. onion |
1/2 c. celery |
1 carrot |
1/2 yellow squash |
1/4 zuchini |
2 cloves garlic, minced |
2 t curry powder |
2 t ground ginger |
4 t orange peel, shredded |
2 t corn starch |
1/2 chicken breast, boneless, no skin, grilled |
Directions:
1. Grill chicken. Chop up all ingredients; large bite size pieces. Cooking spray a lagre skillet. Let skillet get hot. Add bell pepper, onion, celery, carrot, & garlic. Saute' for a few minutes; then add zuchini, yellow squash, and chicken. Take corn starch and mix in 1 cup cold water and add all seasoning. Pour water in skillet. Stirring constantly. Let thicken-if necessary add more water. Cook until veggies are chrisp tender. |
